Neutral Dining Room

This summer I decided to take on a project… photographing the rooms in my house I haven’t shared yet! If you didn’t know, we renovated this house a few years back. It was a pretty big undertaking but I love our location - right around the corner from where I grew up and where my parents still live, our property - wood acreage that is rare to find in town, and our house - designed by myself and renovated by my Dad’s company.

It was a pretty big undertaking but I love our location - right around the corner from where I grew up and where my parents still live, our property - wood acreage that is rare to find in town, and our house - designed by myself and renovated by my Dad’s company.

Our living, kitchen and dining room are all open to each other. We use our dining room every night (that we eat at home) and I love that. It’s not a formal space that collects dust. It’s the family table where we not only share meals, it’s where homework is done, where puzzles are put together, where games are played and where laughter is shared.

I wanted to keep the space beachy but neutral with a touch of farmhouse. The chairs and chandelier are from Ballard Designs and the table is from a local furniture company.

Disney Cruise Summer Vacation

We kicked off summer vacation with a Disney Cruise out of Port Canaveral! It was actually a celebratory cruise — we were celebrating my parents’ 40th anniversary, our 10th anniversary and my nephew’s 2nd birthday!

We kicked off summer vacation with a Disney Cruise out of Port Canaveral! It was actually a celebratory cruise — we were celebrating my parents’ 40th anniversary, our 10th anniversary and my nephew’s 2nd birthday!

The ship was amazing, so fun that we didn’t even get off the boat in Nassau. We’ve been to Nassau before and thought it would be great to instead take advantage of the ships’ activities and accommodations! The kids swam, went on the waterslides and we of course hit up the buffets and treats!

The entertainment did not disappoint. We went to the nightly shows before dinner - they were “The Golden Mickey’s,” “Beauty & the Beast,” and “Believe.” The costumes, the effects, the actors, their voices… what is it about Disney performances that always makes me emotional? The girls loved them too, great for all ages!

My favorite part of the cruise was probably Disney’s private island - Castaway Cay. We hopped off the boat as early as we could and staked out some lounge chairs to set down our stuff. The water was absolutely BEAUTIFUL! It was crystal clear and the fish were almost tame, swimming up to us in the water. We snorkeled all around the snorkeling area where they had submerged different items to swim around. There were so many tropical fish to see, the girls loved it!

The Kids Club was ridiculous. I didn’t take any photos in there but let’s just say the kids don’t want to leave. There are huge spaces, activities, snacks, experiments, and it’s all super secure. If we were on a longer cruise I think they would have wanted to stay in there longer for sure.

So after we left, my conclusion was that I would 100% do another Disney Cruise. It was more expensive than another cruise line, but the ship was immaculate, the entertainment and activities incredible, food was delish and a good time was had by all!

Guest Bathroom Refresh: Palm Leaf Wallpaper Bathroom

I’m so excited about this project! Like legit in love. I go in this palm leaf wallpaper bathroom, turn on the lights and smile from ear to ear. Awhile back I partnered with Walls Republic on my office project and I instantly knew I wanted to wallpaper this bathroom one day.

I’m so excited about this project! Like legit in love. I go in this palm leaf wallpaper bathroom, turn on the lights and smile from ear to ear. Awhile back I partnered with Walls Republic on my office project and I instantly knew I wanted to wallpaper this bathroom one day. I never really did anything in this room, it was painted the same light grey as the rest of the house but somehow the walls always looked dirty! It doesn’t help that they put their hands on the walls when getting on and off the potty, oy!

Like any project, when you start with one thing, it always leads to more and more and more! I really wanted to accent with gold but my faucet and hardware were brushed nickel. I decided it had to go! I changed out the faucet to a matte black, found a cute circular mirror and these sconces, these SCONCES! How cool are they?! And they were less than $50.00 each, what.a.find!

Walls Republic was so awesome to work with! They sent me several samples you may have seen me post about a few weeks ago. I admit, when I taped this one up on the wall my eyes literally looked like the heart eye emoji. I knew it was THE ONE! My wallpaper guy, Jim Finley, said the paper was GREAT quality and really easy to install. He actually said it was the coolest project he’s done in awhile! What do you guys think about how it turned out?

Joanna Gaines' Shortbread Cookies

This past Tuesday was National Cookie Day! I recently made this recipe so I thought I would share. I love cookies, like I could live off of cookies. I also love Joanna Gaines’ cookbook “Magnolia Table.” Everything I’ve tried out of it is delicious, including these cookies!

This past Tuesday was National Cookie Day! I recently made this recipe so I thought I would share. I love cookies, like I could live off of cookies. I also love Joanna Gaines’ cookbook “Magnolia Table.” Everything I’ve tried out of it is delicious, including these cookies!

A few notes, it’s important to make sure these are baked through. I took them out and tried one and they were pretty doughy, so I popped them back in. I had to bake them for significantly longer than the recipe instructed.

These are a substantial cookie. It’s difficult (but not impossible) to eat more than one of these at a time. They would look so pretty on a plate of Christmas cookies too, I may make them again during my holiday baking day! I’m adding the recipe below, I simplied the description just a little so it’s not exactly what you see in her book. If you DON’T have her book yet, GET IT! You won’t be disappointed. HERE is a link!

 

CHOCOLATE-DIPPED SHORTBREAD COOKIES BY JOANNA GAINES

Ingredients - Cookies

  • 3 cups flour

  • 1 cup sugar

  • 1/4 tsp salt

  • 3/4 pound (3 sticks) salted butter, cut into pieces, room temp

  • 4 tsp vanilla extract

Ingredients - Glaze

  • 12 oz semisweet chocolate chips

  • 2 tsp vegetable shortening

Instructions

  1. In a food processor, pulse the flour, sugar and salt to lend. Scatter the butter over the flour mixture. Add the vanilla. Pulse to form small clumps of dough.

  2. Pour onto work surface and gather dough. Divide in half. Form each piece into a log and use a sharp knife to cut 3/4” thick cookies.

  3. Transfer cookies to parchment paper lined cookie sheets and refrigerate at least 30 minutes.

  4. Bake 18-20 minutes in preheated oven at 325.

  5. To make the glaze: In a medium microwave-safe bowl combine chocolate chips and shortening. Melt in microwave at 20 second increments on 50% power until melted and smooth.

  6. Dip one half of each cookie into the melted chocolate, let excess drip off and place on a wire rack. Let stand until chocolate is set, at least 1 hour.

Thanksgiving Table Decor

We had a beautiful Thanksgiving that was simple and full of family time! We played badminton while the turkey was in the infrared frier outside. We snacked on a charcuterie board while the sweet potatoes and stuffing were in the oven. We each read little cards with “Words of Wisdom” and “Thanksgiving Humor” jokes when we sat down to the table.

We had a beautiful Thanksgiving that was simple and full of family time! We played badminton while the turkey was in the infrared frier outside. We snacked on a charcuterie board while the sweet potatoes and stuffing were in the oven. We each read little cards with “Words of Wisdom” and “Thanksgiving Humor” jokes when we sat down to the table. The girls wanted to help so I printed out place cards for them to color and they did so, very beautifully. We decided to host at our house since my Mom is still recovering from her hip replacement surgery but I was happy to be able to set our table with the decor I had around the house. Overall it was very was low stress and pretty perfect and I hope yours was the same!

My Thoughts about A Future with Hope by Carl Armato

As promised… I want to tell you guys all about the book I just finished reading - “A Future with Hope” by Carl Armato. I went through a plethora of emotions reading it. I started it when Amelia was sick and I was sitting with her on the couch for most of the day, so I started out reading it aloud to her.

As promised… I want to tell you guys all about the book I just finished reading - “A Future with Hope” by Carl Armato. I went through a plethora of emotions reading it. I started it when Amelia was sick and I was sitting with her on the couch for most of the day, so I started out reading it aloud to her. The first chapter started with a conversation the author had with a diabetic teen. From what I hear, the teen years are trying for kids dealing with Type 1. They don’t want to think about it. They want to give up and they just want to fit in. As I was reading Carl’s words to the teen out loud to Amelia, my voice began to shake and the tears started to flow:

“You’ve got to support your supporters. I’m no hero. The heroes in my life are my parents and the people who supported me. Those are your heroes too. They’re the ones who watch and make sure you’re ok, so they’re the ones to listen to. You need to support your supporters: love them, appreciate them and, above all, listen to them. And do it like your life depends on it.” 

Amelia asked why I was crying. I told her that reading someone else’s experience, when it’s similar to your own, sometimes makes you emotional. Hearing those words struck a chord. As a parent to a Type 1, you just do what you have to do for your child. There’s really no thinking about what it means. It’s like being thrown into the deep end of the pool not knowing how to swim. You figure it out. You don’t do it and expect recognition or appreciation. You just swim because your child’s life depends on it. Honestly, I’m more emotional about it all now than I was a year ago. I haven’t had time to really reflect because I’ve been too busy learning, too busy worrying if what I’m doing is right. The author talks a lot about support. Support is 100% necessary for a successful life with diabetes and it comes from ALL directions – from parents, grandparents, friends, teachers, the school nurse, the bus driver, coaches and the doctors. While I’m thinking of it I want to thank YOU for being a part of our solid web of support.

The book continues on. Carl talks of his life experiences, of his amazing family who supported him, of scary low blood sugar episodes, of the changes in technology and advancements in diabetes management and of the way he’s been treated because of his diabetes. One particular story that stands out was that once his middle school basketball coach found out he was a diabetic he went from a starting star player to a bench warmer. Even though the coach thought he was showing concern for his player, Carl resented the fact that he was missing out because of his disease. He begged his Mom to let him keep his diabetes hidden and she let him make that choice. This experience set the tone for a good portion of his life. He didn’t want his diabetes to hinder his career or change peoples’ opinions of him. He strived to be the best at every single thing he did, just to prove to himself that he could be the best at anything even though he had diabetes. Through all his success he kept it hidden for a long time, until just a few years ago.  

It was eye opening to read the chapter that talked more about how NOT to be toward those with diabetes, from a diabetic’s angle. He encourages others to not always ask about diabetes, to not focus on the disease but instead focus on the person. Never call out a person for what they are eating, after all, you wouldn’t dare say, “Should you really be eating that?” to someone who may happen to be overweight, so why would you say it to anyone at all? True supporters will never see you as a burden.  

At one point reading the book I had a little breakdown. Carl was talking about how people have said some crazy insensitive things to him over the years, sometimes because of their own ignorance. An eye doctor actually told him he should choose a career that didn’t require eyesight because he’d probably end up blind. Who says that, let alone a doctor?!  Just hearing the things that have been said to him over the years was overwhelming. I know Amelia will encounter ignorance and judgment in her life and I just want to take it away from her. I sat there and thought, “Why her? Why did she get this disease? Give it to me instead!” I don’t know why she was chosen, but I have to trust there’s a reason.

I can’t help but imagine all the good that has happened since Carl opened up about his diabetes. He has given inspiring speeches about his experiences and how without diabetes he doesn’t know if he would have been as driven and successful. He has given words of encouragement to others living with the disease that who knows, may have saved a life. He has spread awareness about Type 1 Diabetes and inspired those affected by it. Only GOOD things have come from being transparent about his challenges and triumphs and I’m thankful to have read his story. Click HERE to pick up a copy for yourself.

Guest Bathroom Refresh: Wallpaper Options

I decided it’s time for a Guest Bathroom Refresh! I happened to use the girls’ bathroom the other day and realized how much they touch the walls to get on and off the potty. I have magic eraser-ed them before, but they just look dingy!

I decided it’s time for a Guest Bathroom Refresh! I happened to use the girls’ bathroom the other day and realized how much they touch the walls to get on and off the potty. I have magic eraser-ed them before, but they just look dingy! I was thinking it would be nice to be able to wipe down the walls. I was also thinking how CUTE wallpaper would look in this space. I then concluded, it’s time for another project!

The one thing that isn’t ideal about the guest bathroom is that it’s an interior room, so there are no windows. I thought about adding a light tube or skylight when we renovated the house but my Dad the general contractor said they are always a pain because of leaks. This is also the bathroom that guests use so I think using wallpaper in the bathroom would make it feel more special!

A few years ago I collaborated with Walls Republic on my office design. I’m a fan of the right wallpaper in the right space, I’m actually obsessed with cute wallpaper. I’m excited to have the opportunity to collaborate with them on this project as well! I picked out a few samples that I liked and they sent them my way. I taped them up on the wall… what do you think about them? I have a favorite in mind, but want to see what you guys think too! What is your favorite?!

Low Carb Brownie Cheesecake Squares

October 24th marked Amelia’s first diabetes anniversary, or “Diaversary” as we have called it. It was a busy day. On Wednesdays Amelia has a tennis lesson at 6pm. Usually this is when we eat dinner so I have to cook something quick that we can eat before we go.

Usually this is when we eat dinner so I have to cook something quick that we can eat before we go. I invited her best friend over, who she takes the lesson with her, to come over after for dessert. I wanted to pick a low carb recipe and I found this one for Brownie Cheesecake Squares on Low Carb Yum.

Low Carb Brownie Cheesecake Squares - Nicki Pasqualone - Type 1 Diabetes Recipes

The cheesecake part of these was delicious. So yum. The brownie part tasted dense and really was more like a crust than a brownie. You wouldn’t be able to eat the brownie part by itself. It definitely needed the flavor of the cream cheese layer to counteract the dark chocolate bitter taste of the brownie. I also think they are best enjoyed cut up in little bite size pieces.

 

Low Carb Brownie Cheesecake Squares by Low Carb Yum

Ingredients

Flourless Brownies

  • 2 tablespoons unsalted butter

  • 3.5 ounces dark chocolate

  • 3 tablespoons low carb sweetener

  • 3 large eggs

  • 1/4 cup cocoa powder

Cheesecake Topping

  • 16 ounces cream cheese softened

  • 1 cup heavy cream

  • 1/2 cup low carb sweetener or less to taste

  • 3 teaspoons vanilla extract

  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and spray a 8x8-inch baking dish with non-stick cooking spray.

  2. In a medium saucepan over medium-low heat, melt the chocolate and butter.

  3. Pour the melted chocolate mixture into a mixing bowl and combine it with the stevia and cocoa powder.

  4. Slowly whisk in the eggs one at a time and then transfer the brownies from the bowl to the pan to bake for 15-20 minutes. Once cooked, set the brownies aside to cool.

  5. Cheesecake Topping - In a large mixing bowl, combine the cream cheese, stevia, vanilla extract, and ground cinnamon.

  6. Blend the mixture until it is smooth and creamy.

  7. In a separate bowl, use a hand mixer to whip the heavy cream until stiff peaks form.

  8. Slowly fold together the cream cheese and whipped cream until all the ingredients are well-blended.

  9. Pour the cheesecake topping over the cooled brownies and place the dessert in your fridge for 4 hours to set.

Calories: 216 | Fat: 20g | Carbs: 4g | Fiber: 1g | Sugar: 1g | Protein: 3g

A Future With Hope by Carl Armato

Last week was a rough one. 😥 Amelia was sick and home from school every day last week. We’re lucky actually.  This is the first time she’s been sick in the year since she was diagnosed.  I now understand the correlation between illness, medication (prednisone) and insanely high blood sugar readings.

We’re lucky actually.  This is the first time she’s been sick in the year since she was diagnosed.  I now understand the correlation between illness, medication (prednisone) and insanely high blood sugar readings. 😡 Holy moly, insulin upon insulin upon insulin and she was still averaging blood sugars ranging from 250-400+. Those high numbers affect her mood drastically.  She feels exhausted and super irritable.  It’s terrible!  The good news is she’s back in school this week and although her readings are still a little high, the average is coming down.  

I decided this morning I deserved a little coffee and couch time. ☕️ I picked up this book, “A Future with Hope” by Carl Armato. He is the CEO of Novant Health in North Carolina recently shared his story about living with diabetes since he was 18 months old. I’m excited to read it and learn about his life and to hear about life experiences directly from a very successful and driven Type 1 Diabetic. This would be awesome for anyone to read — Type 1’s, Type 1 parents or relatives, friends of Type 1’s or ANYONE who likes to learn and who strives to be empathetic. Look at these cuties! We had a great time trick or treating this year, minus the mosquitos. This time of year reminded me of last year when Amelia was first diagnosed with Type 1 Diabetes. We were so nervous about how much candy she could eat and what it would do to her blood sugar. A year in, we’re a little more confident! :)

Outfit of the Day - Army Green Utility Shirt & Black Jeans

Guys! This was the first week it wasn’t in the high 80’s all week! Woohoo! We celebrated by going to the pumpkin patch. While it certainly isn’t chilly it was pretty breezy, so to this Florida girl, 76 felt a little cold. I layered it up with my fave Z Supply tank and an army green utility shirt. Simple, but cute and looks pulled together.

We used to go to the pumpkin patch each year in coordinating outfits and do a full on photoshoot back when I was doing photography full time. I’ve learned along the way that no one likes doing that and snapping just a couple casual quick shots is better for everyone. It still comes out cute and everyone looks happy. I don’t even bring my big camera most places but my brother and his fam came along and he is a photographer as well, so I utilized his cam and skills while we were there. :)

Amelia's First "Diaversary"

It’s been one year. This time last year we were driving to Holmes Regional Medical Center in Melbourne, scared out of our minds, not knowing what “she probably has Type 1 Diabetes” meant for our sweet daughter, or how this would change all of our lives.

It’s been one year. This time last year we were driving to Holmes Regional Medical Center in Melbourne, scared out of our minds, not knowing what “she probably has Type 1 Diabetes” meant for our sweet daughter, or how this would change all of our lives.  With all I know about diabetes now, I feel extremely lucky looking back on this day last year.  I feel lucky that we were paying attention to her and not dismissing her symptoms.  I feel lucky that she wasn’t in DKA (diabetic ketoacidosis), in a coma in the ICU for days, or worse, much worse.

When I start feeling sorry for our family, I tell myself to be grateful, after all, it could ALWAYS be worse.  But to get real and put it bluntly, Type 1 Diabetes sucks.  Amelia will never be able to put a bite of food in her mouth without thinking about how it’s going to make her feel, how many carbs it is, or how much insulin she needs so she doesn’t feel like absolute crap.  She will always have to make sure to eat a few carbs before she goes to sleep so she doesn’t have dangerously low hypoglycemia.  We think about diabetes every single hour of every single day.  It never stops.  I think that’s the hardest part of a chronic disease, right?  It NEVER. STOPS.  There are NO breaks.  It’s exhausting.  And if you DO stop being diligent and aware, you end up in DKA with the potential to leave this earth, or your blood sugar goes so low that your brain is damaged and you never wake up.  It’s literally a life or death situation, every single day.  Is it manageable?  YES, thank GOD.  Just 40 some years ago, personal glucometers, the devices used to test blood sugar with a finger prick of blood, didn’t even exist. People had to test their urine for ketones and basically guess if they were high or low.  We are lucky to live in a time when a diabetes diagnosis is not a death sentence.  

I must brag on our girl though.  Every parent is proud, I know that, but we are exponentially proud of Amelia.  This last year she has adapted to her new normal almost flawlessly.  Have there been hard times?  Yes times a hundred, but she is responsible, conscientious and rarely throws herself a pity party. It doesn’t define her, but diabetes is part of who she is and she isn’t afraid to teach others about the disease. I hope we are teaching her that she can and will lead a long, healthy life because she is fully conscious of her body, what fuels it and how she is affected by food, exercise, stress, sickness and more.  I’ve said it before and I’ll say it again, if anyone is able to deal with this lifelong disease, it’s Amelia.  She is the most special of the special, truly a gift. As cliche as it sounds, everything happens for a reason.  Even if we don’t know what that is, we still have to believe our situation is for the greater good in some way.

One thing I have learned, well, I’ve learned a million things, but one very important aspect of living with diabetes is “support."  Without it, it’s really really hard to thrive with the disease. Support comes from all directions… from parents to siblings to grandparents to friends to teachers to the doctors.  We all, you guys included, are an integral part of a successful journey.  We can’t thank you enough for loving and supporting our family!  Thank you for learning about diabetes as well, because knowing the signs and speaking up could literally save someone’s life one day.

Happy “Diaversary” Amelia!  You’ve totally rocked the last year and I know you’ll continue to be awesome, always!  We are so thankful for you!

White Kitchen Renovation

My kitchen. I’m in love with it. I’m STILL in love with it after living here for three and a half years. In our old house we had a really small kitchen with black granite countertops. I loved the look of black when I picked it out building our first house, but it made the kitchen so DARK.

I knew when we were renovating our new house that I wanted the kitchen as big and as light and bright as possible. I added more windows and picked out Cambria quartz countertops, the color is Torquay.

The flooring is from Home Depot’s Home Decorator’s Collection and I LOVE it.  The stools are from Target and the faucet’s are by Danze.  All of our appliances are from the Frigidaire Gallery Collection.  Our cabinet are by J&K Cabinetry from Ultimate Cabinet Supplies in Roseland, and the knobs and pulls are from Home Depot. Sunday Morning Pumpkin Muffins

I like pumpkin spice things and I’m not ashamed to say it. There’s something about Sunday morning that makes you want to eat things like donuts, muffins, pancakes and waffles, am I right? I recently heard about this Simple Mills brand from someone on Instagram and the next day at Publix I spotted this muffin mix.

I like pumpkin spice things and I’m not ashamed to say it. There’s something about Sunday morning that makes you want to eat things like donuts, muffins, pancakes and waffles, am I right? I recently heard about this Simple Mills brand from someone on Instagram and the next day at Publix I spotted this muffin mix.

This is lower carb than your typical muffin mix coming in at about 14g per muffin versus 28g per muffin! We try to find treats that feel like comfort food but are lower carb than the real thing. It’s pretty cool that this Simple Mills mix only has natural ingredients. The full list of ingredients is almond flour, organic coconut sugar, pumpkin, arrowroot, organic coconut flour, organic spices, baking soda and sea salt, that’s it!
